Once you taste these whiskey-glazed carrots you will never make carrots any other way ever again. They are so easy to make and they taste just like carrots you would order at a fancy restaurant.
I especially love to cook these carrots for any holiday meal. They pair nicely with our Christmas prime rib roast and our Easter honey baked ham.
I stumbled upon this recipe from The Pioneer Woman and found her recipe for whiskey-glazed carrots on her blog site at thepioneerwoman.com.
I made a few minor adjustments to her recipe without completely compromising the flavor. Also, I will sometimes substitute the whiskey for rum depending on what I have an abundance of on hand.
Let’s get started! Here’s what you’ll need…
Ingredients:
- 36 oz. frozen sliced carrots, steams in bag
- 3 tbsp. butter, divided
- ¼ cup whiskey
- ¼ cup brown sugar
- salt & pepper, to taste
Instructions:
1. Steam carrots per package instructions in bag one at a time.
2. Melt 1 tbsp. of butter in a large skillet over high heat.
3. Pour in whiskey and allow to evaporate for 30 seconds.
4. Reduce heat to medium, and add remaining butter.
5. When butter melts, sprinkle brown sugar over the top and stir.
6. Add steamed carrots to skillet and stir.
7. Cover and continue cooking for 5 minutes.
8. Remove lid, add salt and pepper, and stir. Continue cooking until carrots are done and glaze is thick, about 5 more minutes.
9. Pour onto a platter and serve immediately. Enjoy!
