Guacamole is a creamy dip or topping that is made with ripe avocados and fresh ingredients that is so delicious, and super easy to make. Guacamole is best served with tortilla chips for dipping, or it can be topped over any Mexican dish. I especially love to make guacamole when I prepare chicken and steak fajitas as either an appetizer served with tortilla chips while my fajitas are cooking, or to dollop right on top of my assembled fajitas.

My husband and I learned how to properly make authentic guacamole in Mexico during a cruise excursion to Merida, Mexico. The excursion was called Salsa & Salsa, which included a tour of Merida’s historic central plaza, a brief salsa dancing lesson, and a hands on lesson on how to make authentic Mexican salsas and guacamole. Drinking Margaritas was of course part of the entire experience. This was by far the best excursion I have ever done on any of the cruises I have ever been on. They provided all of the ingredients and tools needed to make our very own salsas and guacamole. They also provided recipes and taught you step by step how to prepare your dishes. Everything was so fresh and delicious!
Since we got to keep our recipes I made some notes and minor changes and adjusted it to our liking. You can do the same! For example, if you want extra heat just add more diced jalapeno. Taste and season as you go!
Now let’s make some guacamole and of course don’t forget the Margaritas! Here’s what you’ll need…
Ingredients:
- ½ small onion, finely diced
- 3 ripe avocados
- 1 Roma tomato, chopped
- 1 jalapeno pepper, seeded and finely diced
- ¼ cup fresh cilantro, roughly chopped
- 1 tbsp. fresh lime juice
- ½ tsp. salt
When handling jalapeno peppers I always wear protective kitchen gloves. Capsaicin, which is mostly on the inside of the pepper, is hard to wash off your hands and can burn and irritate your eyes, mouth, and nose if you touch them after touching a jalapeno.
Instructions:
1. Submerge the chopped onions in a bowl of cold water for 2 minutes (to remove any harsh flavor) and drain. Set aside.
2. Halve and pit the avocados. With a tablespoon, scoop out the flesh into a medium mixing bowl.
3. Mash the avocados lightly with a fork or potato masher, leaving them still a bit chunky or to your desired consistency.
4. Add the remainder of the ingredients and fold everything together until well combined.
5. Taste and season with extra salt, lime juice, jalapeno, and/or cilantro if needed.
6. Serve immediately and enjoy!
Recipe Tip:
To store guacamole lay a piece of plastic wrap directly on the surface of the guacamole, so that it doesn’t brown, and refrigerate for up to 2 days.
