Slow Cooker Corn on the Cob

I love cooking corn on the cob in the slow cooker because the corn slowly cooks in all the flavor. Once it’s done cooking there will be no need to add anything extra. Just pile it on your plate and enjoy the sweet creamy buttery flavor of corn on the cob.

Summertime is the perfect time of year to serve fresh corn on the cob. It makes a great side dish for any barbeque, cookout, or any meal really. I especially love serving it with chicken or ribs because you are already messy from eating with your hands. So, you might as well get them extra messy and dig into some creamy buttery corn on the cob too!

If you don’t have access to fresh corn, then substitute the fresh corn with frozen corn and it should taste just as yummy.

Let’s get to cookin’! Here’s what you’ll need…

Ingredients:

  • 4 ears of fresh corn, husks/silks removed and halved
  • 1 cup water
  • 13.5 oz. can coconut milk
  • 4 tbsp. unsalted butter, sliced
  • 1 tbsp. Cajun seasoning

Instructions:

1. Place the corn in the slow cooker.

2. Add the remaining ingredients to the slow cooker.

3. Cover and cook on high for 2-3 hours. Enjoy!
